I'm more a fan of either a half slab sunk into the ground, or a slightly raised road with a nice edge to it. Roofs and torches can be very resource intensive, so I don't tend to go for those options unless it's just across my farm/town. As for tunnels, I like to use them for mine carts and/or minesh...
