I find broadhead arrows, padding, and villager trading for raw chicken pretty much justify a small chicken farm. Plus they are a different type of design due to the nature of their spawning and that is rewarding too.

My world has a stronghold that is strangely closeish to spawn. Like my spawn point glow stone beacon runs out not too far before it. Try building underwater only, Atlantis style with columns. Glow stone beacon makes it much more fun. Hat o water breathing and aqua affinity help too.
